Bobette keeps making and serving these delicious morsels to us because they are so good:
Yucca Bacon Bites
1 pkg. frozen yucca. (Found by the vegetables in the frozen foods)
1 lb. Bacon (Not thick cut)
Boil yucca until almost tender. Not too done.
Cut into bite sized pieces suitable around which to wrap bacon.
Cut each piece of bacon in half.
Cook in the micro-wave or on a pan until barely done.
Wrap bacon around a piece of yucca and secure with a toothpick.
Place on a cookie sheet and finish cooking at 400* until bacon is crispy.
Can be made ahead and kept in the fridge to heat when ready.
